

Been working on boat recipes for healthier snacks for when you’re tired and in a pinch.
8 large eggs
1 cup heavy cream
1 can Bar Harbor chopped clams drained
1/2 cup minced green onions
1 cup Tillamook shredded cheddar cheese
Old Bay and cracked black pepper to your liking
Juice 1/2 of a lemon
Preheat your oven to 350°. Using a 12 hole muffin sheet, spray each hole with non-stick cooking spray (I use olive oil). In a large bowl mix clams, old bay, pepper, cheese, minced green onions, and lemon juice then whisk in eggs and heavy cream. Using a ¼ cup measuring cup, scoop ¼ cup of the egg mixture into each muffin hole. Each muffin hole will be about ⅔ full. Cook until golden brown. Rest for 12 minutes and either enjoy or freeze for later use.
