I have been to some tempura stalls before and noticed the tempuras are really puffy + crispy (puffy i mean theres alot of flour sticking to it and usually the batter expands when cooking) and i find it really cool but can’t replicate them. even Youtube doesnt help because I’ve done what they did and it doesnt seem to help me out, and what they’re doing is just usually thin tempura. does anybody have any idea how to make it more puffy and crispy? https://www.crunchycreamysweet.com/shrimp-tempura/ I want it to be like this puffy but a little bit more, because thats how stalls did it (see link above for reference and the first picture on the link on how puffy i want it to be) thank you!!
