Shin noodles are the best! This looks amazing. What kind of sausage are those?

This was two servings and I used what I had on hand. I used 10 shrimp shells and fried them for a few minutes to make a shrimp oil. Used that shrimp oil to fry up half a white onion sliced, 2 large garlic cloves sliced thinly, 1/4 cup of sliced mushrooms, and sausage. once cooked down about 2-3 min I added a tbsp of gochujang paste, half a tbsp of gochugaru, 4 cups of chicken broth. Bring up to boil added two noodles, and cooked it total of 5 min. I added kimchi and tofu and then the shrimp for the last 2 minutes or so. Seasoned it with fish sauce, salt, lemon juice and serve.
