We are doing a vegan meal prep video to feed our large family throughout the week. We did this meal prep in about 3 to 3.5 hours, these vegan recipes are so easy, budget friendly and family friendly.
Hope you enjoy and get a few ideas for your next meal prep! Eat well!
Recipes:
Orzo Salad:
Cook orzo according to package instructions minus 2-3 minutes for al dente texture.
Meanwhile make the sauce: Juice of a lemon, 2 tbsp mustard, 1 tsp salt, 1/4 olive oil, a bunch of parsley, pepper, toss with orzo and chopped vegetables of choice.
BBQ Baked Beans –
Sauce: Add grapeseed oil to a pan and toast 1 medium onion, 1 tbsp Italian Seasoning, 1 tbsp onion powder. Add 6oz tomato paste, 1 1/2 cup of water, 5-6 tbsp ground mustard, 1 tsp salt, 1 to 2 tbsp ancho chili powder, 1 cup coconut sugar and 1 1/2 crushed tomatoes. For some spice, add 1 tsp chipotle powder.
Simmer for 5-10 minutes, add 5 cups of beans – we used canned cannellini and pinto beans, simmer for another 5-10 mins. Season to taste.
Spelt Pancakes:
3 cups organic spelt flour
1/4 to 1/2 cup coconut sugar
1 1/2 tsp baking soda
1 pinch of sea salt
A little over 3/4 cup coconut milk (or any plant based milk you choose)
1 cup of water
1 tbsp vinegar
1 tbsp grapeseed oil
Mix dry ingredients, set aside
Mix wet ingredients and set aside
Then mix both together until a pancake consistency
Cook on a preheated cast iron griddle for best results
Enjoy with agave syrup (optional)
Taco Rice Casserole: Recipe makes 1 casserole
Start by cooking brown jasmine rice, and chop peppers, onions, olives and prepare beans of choice.
For taco sauce: Add 2 cans of diced tomatoes and 1/2 can crushed tomatoes. Season with 2 tbsp onion powder, 2 tbsp smoked paprika, 1 tbsp Italian seasoning or oregano, 1 tsp garlic powder, 2 tsp cumin powder, 2 tbsp ancho chili powder, 1 tsp salt.
Layer in a 9×13 dish your sauce, rice, veggies, and repeat!
Bake at 350 degrees Fahrenheit for about 20-30 minutes and serve with a salad.
Sesame Noodle Salad:
Cook soba noodles according to package instructions
Sauce: 1/2 cup coconut aminos, 1/2 cup water, 4 tbsp or 1/4 cup of almond butter, 2 tsp vinegar, 2 tsp sesame oil, 1 tsp salt, 1 tbsp onion powder, 1 tbsp agave syrup.
Chop veggies of choice, toss noodles, sauce and veggies and serve cold but you can heat if you prefer!
Pumpkin Spice Baked Oatmeal:
Preheat oven to 350 degrees Fahrenheit
1 can pumpkin puree, 1 can coconut milk, 1/2 tsp clove powder, 1 tbsp cinnamon powder, 1 tsp vanilla, 1/2 cup water, 1/2 cup coconut sugar.
Add pumpkin seeds or coconut shreds (optional), 1 tsp vinegar, sprinkle of salt.
4 cups organic rolled oats, 1 tsp baking soda.
Add liquid to the dry, mix well and bake for about 40-45 mins.

List I have a whole list of items here that I have planned to make today it includes a lot of like there’s some pancakes and breakfast items some lunches and some dinners that are like sort of casserole um freezable meals and I can’t wait to
Share with you what we made today it is 9:30 right now we have about 3 hours to make whatever we can today so wish us luck guys let’s see how much we can Make all righty we are getting all of our ingredients taken care of and we’re going to cook our brown rice first because that takes a little bit longer so let’s get that started I have mercy rinsing some brown jasmine rice and then we’re going to cover it and cook it for
About 30 minutes until done one noodle dish that I wanted to make is my fun which is a rice noodle they’re very very thin rice sticks it’s called rice sticks but it’s like rice noodles and to prepare these we’re just going to soak them in hot water I don’t want to like
Cook these really fast I just want it to sit in hot water and just let it you know kind of rehydrate is the name of the game not cook rehydrate we’re going to get these noodles into the hot water and let it sit until we are ready to cook them we
Typically blend our own flour this is what it looks like we just use our Blend Tech it’s a very powerful blender you can literally blend a whole phone if you want to but we use it to blend all sorts of things like smoothies you can do
Anything um but we like it to blend our own flour we buy our organic spelt bears in bulk we find this is the best way to keep freshness and keep keep the costs as low as possible we keep it in a food grade bucket and then just grind
Whatever we need for the day whenever we need some flour this way you keep the most nutrition the most fiber all the minerals in your flour I have mercy start on some potatoes for our mashed potatoes and Grace is working on getting the pancake batter ready to make some
Pancakes as you can see we have lots of hands to help so that is so helpful something that I have never cooked before what is orzo so it’s kind of like a rice shaped pasta and I am planning on doing maybe like an orzo salad I think
That’s going to be delicious so we’re going to do one of these it seems relatively easy I just have to chop up a few vegetables make sort of a vinegret and um while I’m chopping vegetables for everything else I’m just going to chop up a bunch of vegetables for the Oro
Salad I’m going to cook the Oro as directed maybe just minus two or 3 minutes now one way to multitask is since I know it’s going to be really busy while we are meal prepping I want to make sure that lunch is made for Trey so I’m actually just prepping his lunch
Right now and then when it’s time then lunch will be ready already I made a simple roasted vegetable salad for tray and while I’m here I’m going to chop up other vegetables for different dishes all right the first thing that we’re going to make is the oros so salad so I
Just have some cucumbers going in we’re going to do some oops I lost some I lost a cucumber I got some red onions some bell peppers we need to make a dressing lemon juice put it in STO my St we need olive oil this parsley in there mercy here who
Is seven is a lovely helper I can give her very simple instructions and she can help me make almost anything after the vinegret was done and the pasta the Oro was done we’re just going to dump into a bowl season it with some salt some mustard I probably should have put that
In the dressing and then we’re going to mix it up very well smash B it tastes bom also I would read it a 10 w a 10 good job all right find a tupperware and put that in there while we finished the orizo salad Grace and Israel were helping us make some
Pancakes in the background all right so at this point orizo salad is done pancakes are on its way let’s keep going the next thing I want to make is a delicious sort of baked beans and mashed potatoes we actually made this for breakfast the other day and we loved it
So it’s very freezer friendly I’m going to show you how to make the beans so the first thing we have to do is make sort of a barbecue sauce it’s like a sweet tomato sauce which the beans are going to go into once that’s done we’re going
To layer the baked beans onto our potatoes and sort of make it a casserole type thing it’s going to be bum so in a pot here I’m going to put some onions I am going to add a bit of grape seed oil we’re going to slowly just heat this up
I have some Italian seasoning going in some onion powder these are just the aromatics use the tomato paste and maybe like half can of this or maybe a little bit more we’ll see meanwhile if you haven’t seen I have a pot of rusted potatoes just um boiling
In the background with a little B of salt in this the water and then we’re going to be making a mashed potato with that and we’re going to layer the beans it’s going to be lovely Israel is still working on the pancakes in the background which is very very helpful so thank you
Israel we’re going to sizzle a little bit I’m going to have mercy put in some tomato paste this is a 6 oz can of tomato paste here and then we also have a crushed tomatoes this is 28 lbs it’s a large can of crushed tomatoes because it
Can burn really quickly so we’re going to add one cup of water stir that around add some salt Mercy for some smokiness we’re going to add some ancho chili this is the one that we use it’s so nice and so rich in flavor let’s put a tablespoon and a half
2 tablespoons and for some sweetness we have about this is about a half a cup of coconut sugar going in and then I’ll probably do about maybe a cup and a half okay we’re going to add about three tablespoons of ground mustard just one yep that’s one tablespoon that’s two that’s roughly
Three okay good job now stir that you may need a little bit of water so we’re going to add the water do we need some more sugar it’s not sweet it’s not sweet C half cuz it does need to be kind of now let me taste it is it
Better we need more salt what your taste now remember when you’re seasoning anything you want to make sure that you’re adjusting to your taste buds because if I give you a recie recipe and maybe you have high blood pressure or something and you don’t eat that much
Salt o don’t go with the recipe and just put less salt or if you like it spicy put a little bit of cayenne if you need some more onion powder if you love that or garlic powder go ahead and add some more it’s that easy just adjust to your
Taste buds always for a touch of that Smoky Chipotle spice we’re going to add a little bit of Chipotle powder this is actually quite spicy so we just want a little bit this is the brand that we go with it’s so good so this is the chili Chipotle it’s
Smoky it’s spicy it’s really really good in tacos or um salads really anything that you want so we have a mixture of beans here we have some pinto and some calini beans that we’re going to add to this barbecue sauce let me measure it out for you
Typically I don’t like to measure as you know but for the sake of measuring for you guys we’re going to add one four cups five cups hey let me see so I want you to see this is sort of the consistency that we’re going after the sauce is kind of
Thick it’s not too runny oh this is heavy let me put it down and then the beans are all nice covered in this sauce this is exactly what we want and it is delicious so this comes together really really quick as well we’re going to let this kind of sit for about 5
Minutes and then we’re going to just layer it oh we have to make the mashed potato so let’s go so I have this pot of rusted potatoes I’ve drained most of the water out and then I’m just going to mash the rest of the liquid in here so yep salt I’m sure
You guys know how to make mashed potatoes so I’m not going to teach you but I mean if you want to this is how we make ours we add salt onion powder it’s not hard we just need to add a little grape seed oil maybe like I don’t know for this amount of
Potatoes probably like 2 tablespoons worth you can even puree this if you want uh I just like to keep it a little chunky just for some extra texture the components for the baked beans and mashed potatoes are ready and we are ready to assemble this delicious
Casserole if you don’t want to make this as a casserole you can always just serve this as a bowl of mashed potatoes with the beans on top if you’re making this for your meal prep you can do it this way it freezes beautifully and it tastes
Lovely as well layer it however you like we we started with some mashed potatoes and beans and then just repeat the process now as you can see I still have plenty left over of these beans so we’re going to just save this so we can you
Can freeze it if you want to um but it’s really really delicious by itself or if you need a quick meal idea make this all done we have two casseres ready to go we can freeze them we’re probably just going to put them in the fridge but yeah
That’s two really delicious simple meals you can have this for lunch for breakfast for dinner really anything it’s just like baked beans on toast like if you’ve ever had beans on toast this is inspired by it just with a little of American flare at this point the
Pancakes were ready and the kids had some pancakes for a sort of a branch as well can I you can help make this the faces of Isaiah so right now we are working on our taco rice casserole and we’re simply starting off with a tomatoey salsa taco a little onion
Powder maybe like a lot like 2 tablespoons Mercy smoked paprika if you have oregano you can put that in we have some cumin going in basically making a taco sauce or like a taco seasoning put all that in if you have garlic put that in as well Italian do
Like one of those one and a half salt okay just taste it what so sour and now it’s time to layer I have chopped up some ons bell peppers in two different colors we have some Canal beans and pinto bean mix we also have our brown jasmine rice some chopped up
Olives and that taco sauce and use your creativity and layer it however you want to you want to make sure there’s some rice and sauce together a little bit of a fail we don’t have enough sauce for the rice casserole so we have to make a
New batch of sauce we’re going to layer one more layer of the rice and then top it off with a little bit more sauce and then hopefully we can finish up the rest of these ingredients that we have left over here repeating that process one more time for some extra sauce and then
We’re going to layer it one more time trying to use up all the ingredients that we have so we don’t have any of these leftovers and I don’t know if Mercy is prepping or if she is eating most of our ingredients now that I’m watching this video for goodness sake oh
Mercy anyway I guess this is payment for all of her help I’m surprised we still had ingredients left for our meal preps after all the food that she munched but I guess she’s well fed we were able to make about two of those rice cassero and now we’re working on the noodles the
Rice noodles the my fun now we have a pan here a big Cass iron skillet with some vegetables I just have some carrots Ginger you can put bell peppers I have some cabbage in here any vegetable that you like I’m just going to keep it simple I’m going to probably use a
Little bit of frozen broccoli just to make this easy I don’t have a lot of time so I need to hurry up right now it’s just past 12:00 we’ve been cooking since 9:30 and we have quite a few things done already we have a few more things that we still are doing like
We’re making the My Fun noodles we’re also doing a sort of an almond butter type sauce with like Sesame and ginger and then I have of course some lunch that I need to prep well actually this is going to be prepped for dinner it’s
Going to be a quinoa I do also plan to make a baked oatmeal let’s see if we have enough time to make all of it typically for this noodle dish I like to use uh SOA noodles but they didn’t have soba noodles so I’m just going to use
Some thin spaghetti you just got to work with what you got so I’m going to lower this it typically takes I would say about 8 minutes o to cook so let me get that in and then I will start on the sauce for this uh noodle okay so let’s
Make the sauce we’re going to go very simple so I’m just going to measure it out but I’m making a pound of noodles so I’ll have I’ll use probably like about half a cup of coconut aminos maybe a little bit more we’re going to add about half a cup of
Water we’re going to go with some almond butter this is what we get on Amazon it’s the best cuz it’s so nice and creamy it’s a no stir and it requires or it it has nothing but roasted almonds so I like this I’m going to go with about
This is about I would say four tablespoons of almond butter let’s go with about a tablespoon of this uh onion powder about 2 tpoon of the vinegar you can use apple cider vinegar you ran out of apple cider vinegar so we’re just using some regular one two okay and the sesame oil
One two done and oh some sweetness all right let’s just do like more more more I’d say about a tablespoon and we’ll adjust adjust adjust your taste buds adjust to your taste buds developing your kids taste buds is crucial because they can taste and adjust anything they cook in the future
So in this bowl this is going to be the bowl that I’m using for the noodles I’m going to add red peppers some green bell peppers some red onions for some crunch we have some baby snap peas these are the organic sugar snaps they are so crunchy and so delicious so I’m just
Going to give it a quick rinse now this is just personal preference but I like to kind of snap it and do like maybe half just like this here you guys come help me snuff some of these sugar snaps we’re going to add a little bit of the sauce on the
Bottom we’re going to add the noodles so let me just add the noodles but they’re what it doesn’t matter we need a little bit of that let’s do about half of that sauce we’re going to toss it is it good do you need more sauce no it’s good all righty
So the noodle salad is all done here we can we’re going to just put this into a tupperware and is ready to go okay I have two pots I have here I’m making a pinoa really quick for dinner tonight we’re almost done we don’t have a lot of time but it’s almost almost
Done I also have my vegetables here which I’m just going to put my myun noodles the rice noodles I’m just going to put it in here we have some leftover peanut sauce so I’m just going to use that why not I have leftover snap peas as well so
You may as well just put that in I know I’m going to need some more coconut aminos maybe a little bit of water you can add some soy sauce if you want to make sure that it it is non GMO and organic of course drizzle a little
Sesame oil in this and a little vinegar as we’re working on the noodles we’re working on the quinoa side by side and we’re just going to slowly slowly just cook this down I’m going to add my quinoa and some seasonings in my in my quinoa dish uh salt
Salt I’m going to use kind of the same seasonings in here because I don’t have a lot of time so I’m going to make sort of a fried rice inspired so sesame oil coconut aminos onion powder in goes all of my quinoa these noodles that I’m making are
Actually kind of pet inspired it’s sort of like a Filipino Noodle and that comes together really quick moving on to the pumpkin spice baked oatmeal while I’m in the background still working on the noodles and I’ve already added water to the quinoa to get that going I have
Mercy just emptying one can of organic pumpkin pite in a measuring bowl for seasonings for this we’re going to do about half a tablespoon maybe like a teaspoon of clove powder we’re going to do a whole tablespoon I think we like it quite cinnamony of cinnamon if you have ginger
This would be a great time to use it as well um van uh we need some vanilla one can of coconut milk is going in there and then meanwhile I’m going to measure out some oats so I’ve got one about yep four four cups of Oats here this is just
Regular organic rolled oats we’re going to add some maybe like a handful of pumpkin seeds just for some added texture this is the one that we use I will have the links of course in the recipes in the description we’re going to do a teaspoon of baking soda in with the oatmeal I
Think a sprinkling of salt and for a little sweetener we’re going to put about I would say about half a cup of sugar maybe like 3/4 of a cup maybe half just a little over a half a cup we don’t want it too sweet stir that Mercy we’re going to add a little
Bit of smells good okay in the liquid we’re going to add about a teaspoon of the vinegar just for some extra liquid I want to add about a/4 cup of water put the liquid into the dry I found some coconut shreds so I’m going to add a little bit of that why
Not after everything is mixed up we are putting it into a 9 by9 I believe is the the casserole dish and then we’re going to bake it in the oven the oatmeal into the oven it’s actually I turned up the heat it’s at 400 because we don’t have
That much time um so we have it in the oven at 400° fing height we’re going to bake it for about half an hour we’ll see what happens we’ll check it at about half an hour but definitely try if you can to just bake it at 350 for about 45
Minutes an hour or so I’d say our myun noodles are all done so we’re just going to put it in a tupperware it is ready and prepped and ready to go to eat whenever we need a quick bite and they taste delicious Isaiah was saying he wants it
For lunch today so we’ll probably serve this up for lunch maybe we’ll see the baked oatmeal has come out of the oven it looks delicious it’s going to be such a great warming breakfast for the kids look at all this food that was prepped I couldn’t have done it without
The kids so they definitely definitely helped whenever you can grab an extra hand and uh make some meal prep because this is definitely going to help I’m having a smoothie for lunch because I’m tired already it is now 11:5 the oatmeal is finally done but everything else was
Done in we started at 9:30 so 10 11 12 in 3 hours a little over 3 hours which is still great for a lot of these meals prepped for the week ahead today I was pretty ambitious but we managed to make quite a few things here so out of 1
2 3 4 11 12 things that I was trying to push for we made eight items out of the 11 that’s pretty good and that’s including the mashed potatoes and baked bean type of casserole we also have a my fun I also wanted to mention that during
All of this cooking I did make lunch for um tray there’s uh food that the kids are eating as well for lunch and then we have dinner ready for tonight as well which is the quinoa we made pancakes we had oatmeal we have an orzo salad I was
Going to make mac and cheese so I could show it to you but today we didn’t have time but that’s okay also did the taco rice casserole we actually I believe we have two of those we had the um the noodle salad which was really good as well so I really think we

I have just been diagnosed with RA, which is a autoimmune disease. I've been doing alot of research and along with seeing a rheumatologist, I've decided to try the Paddison Program, which seems to be wfpb no oils, sugars , refine flours and low fat.
I noticed your husband's diet is different than the rest of your family. I'm wondering if this can sometimes be hard for him when you all sit down for dinner and he cannot eat what everyone else is eating?
Sarah’s Vegan Kitchen has a vegan avoglemono recipe using orzo. I made a version of that using shredded tofu & chickpeas and then a pasta salad using it as you all did!
