How do you like your Pepperoni Pizza?… Pepperoni under the cheese (aka Montreal Style) or Pepperoni on top of the Cheese (New York Style)… tonight I made one of each to taste test.. problem is, I liked them both.

Note: I totally get that these will be named something totally different in your region.

    I made the mistake of trying toppings under cheese one time. When you launch the pizza, everything slides off! Don’t do it!

    That’s Montreal style? Hmm no wonder I was so unimpressed with pizza when in Quebec.

    I tend to do both, when I do my Detroit styles I put it under the cheese and sauce on top of the cheese with more pepperoni on top of the sauce. Allows juices from the pepperoni to absorb into the crust and you still get crisp pepperoni on top.

    Definitely under for me , it makes the sauce taste better . But if you like the cooked pepperoni taste then on top.

    I’m sure I read somewhere to always have pepperoni on top of a pizza otherwise it (the pepperoni) won’t cook properly.

    Under the cheese, you get a better flavour palette from whatever you topped it with

    Usually on top for crispness, but depending on the pepperoni and oven sometimes it needs to be under a few layers so it doesn’t burn.

    On top, plus if you microwave the pepperoni for a handful of seconds they’ll be extra crispy with not so much grease

    It depends on the style. Something that you have to cook for a long time, like Chicago style? Under the sauce so it doesn’t burn. Otherwise, pepperoni on top to crisp.
