I’m not personally doing keto, my wife is, so been finding good things to make. Had the recent lightbulb moment that ceviche is basically keto friendly! So I made it into a meal. Romaine lettuce boats, seared lemon pepper tilapia, topped with ceviche, chunky guac, and pickled radish.

The ceviche is pretty basic – 1lb diced shrimp, 3ish limes, 2 heirloom tomatoes, like 3/4 a red onion, 2 seeded jalapeno, sesame oil, garlic, salt, pepper.

Dice up all of the above, I personally just put it all in one bowl, the juice from the lines should be just enough to cover everything. I go heavier on the lime, since it’s my favorite fruit, can always cut back some. Refrigerate for a few hours until the shrimp is “cooked”.

The tilapia is just seared tilapia. Salt, pepper, lemon and butter.

The guac is also just a basic guac. Fine chopped avocado, lime, the rest of the red onion, s&p, smoked paprika, ancho chili, more lime because I forgot I already put lime in.

The picked radish is pickled dill radish.

2x lettuce leaves with the stems cut off, a layer of guac, hot tilapia fillet, topped with nice chilled (and drained) ceviche.

I will say, cutting the tilipia fillet in half is the way to go. The one in [the pic](https://imgur.com/a/OPpxFcW) is a whole fillet – takes up way too much space in the lettuce. Made a second one with half a fillet, can get more of the other materials on, is definitely better that way.
