1st time smoking in my life, bought a woodwind pro.
Smoked some dry rub chicken and piece of steak @250 with smoke level @10. I also added one smoke box worth of apple wood to the smoke box.
The chicken reached 165 in one hour so i took it out.
The 1 inch steak took about 30 minutes and reached 125.
It tasted way too smokey much more than i ever imagined. (Only past experience i have is grilling over charcoal grill. I got this pellet smoker thinking i would love smokey meat)
Chicken was kinda? soft but not fall off the bone. Skin was rubbery af.
Steak fat did not render at all tasted like tough fat.
I will try to tone down the smoke level and maybe use charcoal instead of wood in the smoke box?
What do you guys think I should do to change my smoke experience?

Welcome to the club and nice selection on a smoker! I’d say practice with a larger cut of meat. Probably a pork shoulder. With the chicken pieces you’ll want to go hot and fast for crispy skin. That steak is simply too small. Look up reverse searing a steak and give a ribeye a go. You’ll get there.
