Notes: Normally I don’t have a morning snack, and was going to have the yogurt with my breakfast, but it was a big breakfast and I was in a snacky mood, so I set it aside till later.

This would come in under 1200 if you don’t need to count coffee/coke zero calories.

“Spicy Protein Pasta” is my dinner meal prep for this week (I’ll have 8 days with this for dinner, actually). It’s really pretty simple.

I used Barilla protein spaghetti… the whole box. It’s a bit too firm if you boil it like regular pasta, so I added about an extra 6 minutes and it was perfectly al dente. Before adding the pasta, I put an entire bag of frozen chopped spinach, and boiled it right along with the pasta!

For the sauce I browned 1lb of ground turkey (97/3). I seasoned the ground turkey with 1tbsp each of everything bagel seasoning, crushed red pepper flakes and freeze dried garlic, then made it into 4 patties and seared the edges like a hamburger before crumbling it up to finish cooking.

Separately, I melted an entire round of laughing cow light (8 wedges) and 2 tbsp of I Can’t Believe It’s Not Butter Light with a small can of diced green chilies and tomatoes. Mix with the meat for the sauce, and top the pasta as soon as it’s drained. Weighed into 8 equal portions, it’s 302 calories and… a lot of pasta. Like a lot a lot.

Was tasty but I don’t think I will get the protein spaghetti again. The protein penne was good, but not a huge fan of this one. Might double the seasoning next time, because it was a bit tame for a spicy pasta, but tastes vary. 🙂
