I love love to share my food. I love to cook and invite friends over to eat. I love all opportunities that allow me to share my passion for cooking. When I hear potlucks (at work or church) I dance inside! This fried rice has been made for two putlocks with two different groups and it has a hit on both occasions. The first time I made this for a group, it was for my last day at my previous job. It was such a hit that my colleagues refused to call the other units to come eat. They rather took the rest home…if you know me by now, you will know my day was made! The next time I made this was for the very first potluck at my current job. And just like before, it was a complete hit with them. So I thought to share it with my family here and I hope it wins you all the accolades you so much deserve for trying a no fail recipe!

Ingredients for rice
4 cups jasmine rice
1.5 cups pan drippings from baked chicken
1/2 of a medium sized onion
2 tablespoons curry powder
3 tablespoons soy sauce
2 cups water

Actual fried rice Ingredients
Cooked rice
2 LB shrimp
1/2 teaspoon black pepper
1/2 teaspoon white pepper
1 teaspoon salt
80grams fresh ginger root
1.5 cups carrots, julienned
3 tablespoons cooking oil
5.5 oz scallions
3 large eggs

  4. So I made this and let me tell you it is requested so much. I also added crab meat to mines. So delicious. I also used ginger powder instead of the grated ginger due to me not having any but it was perfect. 🫶🏾👏🏾👏🏾

  6. This shrimp fried rice looks so good! If we don’t have our own chicken broth from baked chicken can we substitute with store bought chicken broth and still get the same result?

  7. I made this tonight and it was “a hit”! I didn’t have leftover chicken stock, used store bought and still was DYNOMITE. It’s just the wife and I, so I halved the recipe and used 2 cups of chicken stock for 2 cups of rice. I also do not have a wok, but I do I have a large sauté pan and it “WOKed” fine. Hardly ever write reviews on recipes but felt this one deserves the credit!
