Hello all, baked my first loaf last night. It came out better than I expected but not perfect, however I wasn’t expecting perfect on my first try. The crumb seems too dense, and not airy enough.
Any and all feed back welcome 🙂
For reference: 75% hydration – 300g AP flour, 200g Whole wheat flour, 375g water, 75g starter, 10g salt.

That’s *excellent* for a first go! You did pretty much all the right things. Do a couple more and you’re aces 😏👌
