

Picked up an Austin XL onyx this weekend and tried some ribs. Came out great and learned some things to bring to my future cooks. 225-250 for around 4 hours. Spritz twice and pulled at 195. Wrapped in foil with the bbq sauce and let them sit in the cooler for an hour before eating
