
I saw several different variations of the recipe online, so I decided to make my own. I used a blend of tahini, lemon juice, maple syrup, smoked paprika, and a pinch of salt instead of vegan mayo. Filling is chickpeas, chopped red onions and celery. Topping is Trader Joe’s cruciferous salad mix. I wish I would’ve had fresh bread but didn’t have any, so I toasted some Ezequiel bread instead. First time making this sandwich, and will definitely keep on rotation.

Chickpea salad is *heavy* in my rotation. My mixture sounds similar to yours.
What I love about it is I just throw everything in a food processor and it comes out great – such a quick, easy and delicious meal
