    Absolutely amazing. I dont think you can get much better than this without SV.

    Awesome crust, small gray band for the method, perfect doneness. 10/10 considering method.

    The only suggestion I have is to separate the searing and aromatic steps. It wont make the steak better, but it’s easier to execute and produces the same results.

    Like French Roast coffee only exists to show off an exaggerated roast, this shows off an exaggerated crust. Not a bad thing, per se, but it did sacrifice other subtleties.

    Beautifully done! I usually don’t like the edges to bee too crazy dark but you got full coverage with that sear (in my opinion based on 3rd pic ) so that is absolutely fantastic!! I hope you sautéed up some veggies with that leftover butter lmao. Looks good man! Now sacrifice a piece of fat/gristle to the fur baby🤣🐾

    Some folks have been asking how I got the sear the way that I did. Hope this helps!

    I made sure to pat the steak as dry as possible. I seasoned it a few hours prior with just course salt. I took it out of the fridge around 30 minutes before I was going to cook it. Made sure to pat it completely dry again. I heated up the pan with a touch of oil in it and then seared both sides for 2 minutes. After that I removed the pan from the heat and placed the steak to the side. Once the pan cooled down a bit I threw in the butter and rosemary. I added the steak back to the pan and basted it for about a minute and a half on each side. I took it off and let it rest for a bit. Cleaned up the kitchen a little bit and then sliced it up!

    The crust is so dark and solid I thought for sure it would be too done in the centre. But no, it’s perfect. I don’t think I could do that if I tried
