I haven’t had proper Salisbury Steak in a long time, so we made it tonight for my “Fellowship Dinner” that I have with my buddies.
We used 80/20 beef, spiced the meat with salt, pepper, nutmeg, smoked paprika, mustard powder, parsley and crushed up some Kellogs Club crackers. Diced some sweet onions, sliced baby bellas, cooked them down and then made a roux with the beef drippings, butter and chicken stock with chopped arugula and garlic. Steamed rice and seared green beans as a side. It was delicious. Big juicy patties too.
