It really does take an incredible amount of time for onions to properly reach the maillard reaction & caramelize. If a recipe says anything less than 40 minutes, it’s probably a goldurn lie.

When professional chefs write “caramelize onions for 5 minutes”, they’re just lying through selective omission in order to spare the reader’s feelings.
Because what they really meant to write was something like “(you’ll probably) caramelize onions for (only) 5 minutes, (like the lazy, half-assed culinary pleb you are)”.

Browning onions is 5 minutes or so, just to get a bit of singe on them, but they are not caramelized for sure. Not all onions should be caramelized though.
