Recipe I made a bit ago. On a pot with olive oil I added shrimp heads and shells, garlic, half of a roma tomato an a bit of onion tomato paste. Cooked that for a bit, then deglazed with white wine, added salt and pepper to taste, blended and strained it. I cutted shrimp in small cubes and lightly cooked them. Then added the sauce on the same pan I cooked the shrimp while the pasta was cooking in a pot. I finished cooking the pasta in the sauce with some of its water and added a small knob of butter to make everything come together nicely. Then with the residual heat I finished cooking the shrimp while mixing everything together and also added a drizzle of “ajo perejil” which is olive oil blended with garlic and parsley.
