My neighbor makes top shelf “Alaskan” sourdough that rocks, and he gave me this. What do you call this and how do I use it? Googling “yeast chunks” was no bueno.

    It looks like what happens when my starter overflows. You can theoretically just add water to get it loose then feed it.

    I do this when I go away for a few months

    Spread your starter on parchment paper, let it dry someplace warm and then break it up and store it in a jar

    Looks like dried starter.

    If you have a good strong sourdough starter you can spread it thin on parchment and let it air dry, it looks just like this.

    Get a scale, put a handful of these chunks in and some flour, then add water equal to the weight of the flour/chunks. Stir it up. They should dissolve more or less, but they’ll populate your starter with yeast.

    It’s a good thing to make if you have a good starter in case it dies for some reason.
