Sauted about 1 large red bell pepper, 2 small zucchinis, half a small onion in a pan with 1 tbs olive oil. Once softened, added a pack of baby bella mushrooms, then allowed those to soften as well. I seasoned with a bunch of salt, pepper, and paprika.
In a separate nonstick pan, I scrambled 3 whole eggs, 1 16 oz carton egg whites, and 1 small container Fage 2% plain greek yogurt, seasoned same as above. Split into 3 meals (could also be 4 for lower cals), topped with green onions! Will be adding sriracha as well. I tried adding sriracha in to the eggs as they cooked, which turned some a rather funny pink color, so I don't recommend 😅
