Barramundi with Zesty Cilantro Sauce
w/Buttery Carrots & Garlic Couscous
Heating up the oven just for the carrots seemed a little on the wasteful side so I pan-fried them instead

I haven’t tried the barramundi this way, how was it?

I roasted carrots for the first time today and they got to soft for my liking. I cooked per the recipe (a different recipe then yours), but also had convection turned on so may have needed less time. Pan frying may be the better way to go, easier to control and see how the texture is. Overall though I prefer steamed carrots so just may stick to that. They and the rest looks good though!
