Last nights spread
- Pork ribs. Did the 3-2-1 method for the first time.
- Tandoori chicken. I wish I had a tandoor but I wanted to get creative here. Came out absolutely amazing.
- Picanha. Sliced up a nice 3 inch steak! Didn’t make the cut.
One thing about yesterday was managing the entire cook using different methods. The ribs went on mid afternoon and were smoked heavy. I don’t have a traditional smoker, but I’ve been using my trusty Master Forge. I wanted a nice hot flame for the chicken and I had to cook it with the bbq open, so I slide the ribs over the charcoals so they had some heat but not exactly direct. I was a bit worried but the ribs turned out amazing.
To finish the evening, we did a nice Picanha. Reverse seared and caveman seared.
