It's been almost a year of fermenting my own hot sauce and am very excited for this next batch. I've been experimenting with nectarines and ginger, which has added a new depth of flavor to each batch. I'll see these jars again for processing on 2-3 weeks. Second pic is of the last batch that I made a few months ago, which is my personal favorite batch/recipe so far
