


Two thick fillets with the skin on is what you get. I’ve never had barramundi, but it was juicy and not at all fishy, with crispy skin. It came vacuum sealed in plastic, and that was wrapped in thick brown paper. It looked and smelled super fresh. Seasoned it with cumin, salt and pepper. Grilled it in my cast iron skillet with lard, about 6 minutes per side on medium-high. Carrots are roasted, with lemon zest, and the toasted couscous with veggie broth ended up being omg good. When I was melting the butter in the pan so I could toast the couscous, I accidentally browned the butter, and that just added this 🤤 to it where I wish I’d had more. The fried fish is topped with an oil and lemon juice ‘sauce’ containing finely chopped cilantro, chopped raw garlic, cumin, and chili pepper flakes.
For me, this meal was 10/10. Everything ended up being delicious, and even tho the roasted carrots were really simple (salt and pepper), the roasting made them sweet and delicious. I also salted the carrot slices after cutting and let them sit for about 15 minutes, then drained the excess water before tossing them in oil and roasting. I’ll definitely be ordering more fish/seafood meals in the future. I’d always been wary about the quality, but this looked great. The paper wrap said The Better Fish on it, but I think that might be some sustainable farming quality label.
