Shrimp so we were making our our Seafood Roto with the shrimp nicely cut everything so that every Spoonful you have a little bit of seafood we had an enormous amount of complaints because they want to see the big shrimp in the dish

I'm with you. The smaller 31-40 U shrimp. I feel like they're a little sweeter and not as tough. Even if you sous vide the bigger like 15 U shrimp they taste tough and stringy.
