2 1/2 Cups Yellow Cornmeal
1 Tablespoon Salt
1 teaspoon Pepper

3 Cups Whole milk

We strain our peanut oil after frying fish and before using again while it is cold, then we simply add more peanut oil to make up for the crumbs and oil that was removed. Unless you make the oil hot enough to smoke, you don't throw that oil away. Why you said the oil has to be thrown out makes no sense to us. We've been cooking fish this way as long as I've been around and I'm on Social Security. We agree with everything you said except for wasting the peanut oil, and putting twice as much salt as anyone needs, but that is you, and we think you for a great video.

I can't believe what you said about the oil is not good. Hahaha!. Hell, I strain it into another container and put it right back in the pot with a cover. I fry French Fries keep the oil and cover no need to strain. I flour up some onion rings fry and again strain the oil. By now I may need to add a little oil. I'll fry Chicken in it too. No need to throw away the oil after one use. You must be rich. Haha! I just use an 8 or 9-inch pan.that is 8 inches deep too. I just cook for myself and the small pot does fine. I deep fry two pieces of chicken. I'm old and don't eat much. I just pour oil from it to fry fish in my cast iron pot.

Good instructive recipe for a simple dish. Why the milk x 2 hrs? Get rid of fishy taste? How about 50:50 cornmeal / flour? Do they use hot sauce for catfish in the south?
