Vegan tuna melt with creamy tomato soup, latest entry in the month of sandwiches competition with my girlfriend.

Tomato soup:
* 800g of chopped tomatoes * 400g coconut milk * 250g tomato paste * 1 cup vege broth * 2 tsps minced garlic * 1 tsp basil * 2 small white onions * 2 tbps maple syrup * Salt and pepper at the ready
Lil olive oil, brown the onions, add basil and garlic until good smell. Add tomato ingredients, broth, coconut milk, maple syrup and boil it up for a while. Add 1 tsp salt and crunch some pepper over it. When all cooked through, whiz it with a stick mixer. Let simmer down until thicker.
Sando:
* 1 can of F’sh pea flakes or chickpeas * 2 tbps vegan mayo * 1 tsp Dijon mustard * 2 of those cute pickled onions, chopped up * A bit of pickle, chopped up (I used two long slices) * Vegan cheddar cheese alternative * Thick white bread * Margarine spread * Salt and pepper still standing by
Mash chickpeas with a fork until just still a bit lumpy, or just empty the flakes into a bowl. Add mayo, mustard, onions, pickles, lil salt and pepper to the “tuna” and mix all together. Butter outsides of bread and layer slices of cheese alt > “tuna” > cheese alt. Slam that shit in the griddler and wait for it to cook all the way through.
Just a note on vegan cheese alternatives, some of these suck and some of them rule. The one I used here is a brand called Angel Food cheddar. It’s a weird texture until you melt it where it becomes a delicious lava and is great to tie sandwiches like this together.

I’m not anti vegan at all, but I am anti calling shit what it isn’t. If it isn’t tuna, don’t call it tuna. Maybe I’m crazy.

I made a vegan tuna salad when it was requested at a kitchen that I worked in and it was great. Pulled jackfruit, semi mashed chickpea, onion, celery, nori, lemon, veganaise, and old bay. I’m personally not vegan, but people that get upset about this type of shit are giant babies.

If you’re vegan, be vegan. Why tf they always want to call their shit something that uses animal products? Just seems so weird to me. I’d think if I thought using any animal product was morally wrong, I’d want to distance myself from using the same names
