Hello everyone from Cooks Corner today we’re making a delicious and healthy classic cabbage soup this recipe is perfect for a cozy night in a quick lunch or even a meal prep option for the week all right first things first grab a pot and fire up your stove to medium
Keat let’s add those 2 tspoons of olive oil grab that onion and have it we’re going to dice it up finely the smaller the pieces the faster they cook and the more evenly they distribute their flavor throughout the soup smaller pieces help them cook evenly and release all their
Delicious flavor into the broth pour the thinly diced onions into the pot next up is the carrot they add sweetness and a vibrant color to the soup we’ll take one large carrot cut it into long thin strips first and then chop those strips into even smaller pieces this ensures
They cook at the same Pace as the other vegetables after chopping it add it to the pan nicely repeat the process with two celery stocks nice and small chop them fin as thinly chopped veggies not only cook quicker but they create a more pleasant texture in the final soup
Celery adds a wonderful Crunch and a subtle celery Flavor now that all our veggies are prepped it’s time to get them cooking use a spatula to mix the chopped onion carrot and celery in the pan with the olive oil give everything a good stir and let it cook for a few
Minutes until the veggies start to soften now comes the magic add those fragrant garlic cloves dried oregano and dried basil let let them cook for another minute or so releasing all their wonderful Aromas as you can already see in the video it smells heavenly I wish
You could smell it from here now comes the star of the show the Cabbage but remember we want the Cabbage to cook through quickly and evenly so thinly slice it we’re slicing it thinly again for two reasons first it cooks faster and second it creates a lighter and more
Delicate texture in the soup add the sliced cabbage to the pot and give everything a good mix we want to cook this for a few minutes until the Cabbage starts to soften slightly in fact let all the veggies cook until they’re softened but still have a bit of a bite
Now let’s add some moisture and flavor toss in the diced tomatoes and four cups of vegetable broth vegetable broth adds depth and complexity to the soup but feel free to adjust the amount depending on how thick you like your soup bring everything to a simmer and let it cook
For about 15 to 20 minutes or until the vegetables are tender taste it and adjust the seasonings with salt salt and pepper as needed then give it a squeeze of fresh lemon juice this brightens up the flavors and adds a lovely Tang finally for a pop of freshness garnish
