I think this is the last of the “mastering dough” recipes, at least the ones that we are participating for the foreseeable future. I found the dough very easy to work with since it is just a flour & water dough. I was able to prep the ingredients and the dough a couple of hours ahead of time which was great as I had to take the puppy to class, and I try to get all of my mises en their places ahead of time for the SO to cook as I am driving home. I found the flavors delicious and loved the chewy texture of the hand pulled noodles. It is labeled a “hard” recipe, but don’t let that deter you. I prepped the cucumbers a little thinner than the recipe states and I typically partially peel them (and in this case de-seeded them as well) because the SO doesn’t love cucumbers. I like cucumbers, but still found the side a bit bland (it is just sugar, vinegar, s&p after all). Garlic or chilies or something similar could have kicked that up a notch and thus the .5 reduction. Emir gave this a 1/10 because the vinegar on the plate made him not want to touch it, but that is my fault for not plating the cucumbers in a ramekin or similar. I hope this recipe makes its way onto the menu again.
