


I’ve been struggling with digesting sulphur-rush vegetables, lots of bloating for hours after eating, so I made a steamed and fresh vegetable salad to make it easier to digest and cuts down on chewing time significantly. It’s made a big difference. Here is the recipe:
Dice and steam or boil these vegetables on low for about 15-20min:
– 1/4 red onion
– 2 asparagus
– 1 Brussels sprout
– 1 cup green cabbage
– 3 cloves garlic
– 1/2 cup broccoli
– 1 cup cauliflower
– 1 carrot
– 1 cup zucchini
Add to large bowl once cooked
For the fresh vegetables I diced up:
– 1 piece of celery
– 1 cup arugula
– 1/2 cup romaine
– 1 turmeric root
– 1/4 cup fresh dill
– 1/4 cup bell pepper
– 1 tbsp fresh diced rosemary
– 1/4 cup endive
I also added:
– 1 Brazil nut crushed into pieces
– a sprinkle of capers
– salt
– pepper
For the cilantro lime dressing I blended:
– juice of 3 limes
– 1/4 cup olive oil
– salt
– pepper
– 6 cloves garlic
– 2 cups cilantro
– garlic powder
– 1 jalepano (no seeds and wash hands directly after cutting)
– dried cumin
– you can also add 1 cup Greek yogurt to make it more creamy, but you should add a little water as well. (I eat dairy free so I didn’t add it). Or, you could add an avocado (I’m trying to eat low histamine so I didn’t include that either).
Salmon:
pre-season salmon with garlic powder, salt, pepper, onion powder and paprika. I added a 1tbsp of coconut oil to a pan on medium heat and allowed to melt before I added the salmon skin side up. This lets the top get some crisp to it. I wait about 4-5 min before flipping it over so that the skin is on the pan. I add a little more of the same spices I pre seasoned with and I then cook for another 4-5 min. Once done I added to the bowl with the other ingredients and ate it. Yum 😋
