Still playing catch up with meals. My zucchini naturally did not survive the two weeks plus I don’t really care for them so no real loss. But this salmon was amazing!

I don’t really care for walnuts (story for another time) so I made sure to crush them real good. Sometimes I’m lazy and I hate the step of cooking the bread crumbs but this worked out so well! It really did give a good crunchy crust to the salmon, but not overpowering. I also enjoyed the sauce (yogurt, sour cream, lemon juice) on top of the salmon and under the crumbs.

Overall this had amazing taste and it’s very easy to replicate so I’ll definitely be remaking this.

    I love zucchini! I like doing them in sticks and keep them a bit thick so they don’t get soggy. With that zucchini It looks like I’d maybe get 3 sticks out of it, 3 probably pushing it lol.
