Hi everyone! Sharing my first attempt based off of a recipe I found on here. I used 6 Roma tomatoes, 2 jalapeños, 1/2 an onion, cilantro, salt, and lime juice. It tastes pretty good, but it’s not quite what I was aiming for. The first picture is my attempt and the second is my local taco restaurant’s. Anyone have an idea or a recipe that comes out similar to the second picture? I’m not sure how theirs comes out such a vibrant red and mine was more of an orange color. Thank you!

I think canned tomatoes result in a darker color salsa than fresh tomatoes. Is pic 2 a restaurant salsa? Restaurants often use canned because it’s faster and cheaper to crank out big batches of salsa more easily. Not that there’s anything wrong with that, in fact it sometimes results in a unique “restaurant style” taste.
On top of canned tomatoes, don’t puree your onions so finely dice them by hand or add later on when processing. The restaurant salsa looks like they purée the tomatoes and then have larger chunks of sliced onion and other ingredients. The onions puréed up will lighten up the color of the salsa significantly.
