Skor Almond Cookies (Recipe)

    **Ingredients**

    * 3/4 cup (115g) butter
    * 1 tsp almond extract
    * 3/4 cup ( (150g) brown sugar
    * 1/2 cup (100g) granulated sugar
    * 1 egg
    * 2 (192g) cups almond flour
    * 2 (272g) cups baking flour
    * 1 tsp baking soda
    * 1 tsp baking powder
    * ~24 Skor pieces – or- Skor chocolate chips
    * *If using gluten-free flour, add 1 tsp xanthan gum*

    **Directions**

    1. Preheat oven at 350°F (180°C)
    2. In a large bowl, add **3/4 cup (115g)** **butter**, **3/4 cup (150g)** **brown sugar**, **1/2 cups (100g) white sugar**, and **1 tsp** **almond extract**.
    3. Mix until smooth
    4. Add **1 egg**
    5. Mix until well combined
    6. Add in **2 (272g) cups baking flour**, **2 cups (192g) almond flour, 1 tsp baking soda**, and **1 tsp** **baking powder**
    7. Mix until well combined
    8. Line a baking tray with **parchment paper** – OR – **cooking spray**
    9. Create golf ball sized portions of dough, and add **1 Skor piece** to each (*alternatively: stir Skor chocolate chip pieces into the batter before creating balls of dough*)
    10. Evenly space each ball of dough onto baking tray
    11. Bake the biscuits in the oven at 350°F (180°C) for 9-11 minutes
    12. Allow the biscuits to cool for a minimum of 15 minutes, then…
