Got some awesome cut St. Louis style ribs making 3 types to see which is best & going to smoke for about 2.5 hrs before wrapping can't wait!! Using mixture of Cherry, Mesquite, and Pecan woods in the smoke box (yes it's large enough to add a couple of chunks of each), and the smell is DEVINE!!
