Not gonna lie, mug cakes are an absolute godsend for me. They taste delicious. It’s easy to stick to this way of eating when you’re not feeling deprived.

In anticipation of Easter, I picked up some silicone molds; miniature Bundt pans, and Easter bunnies. Made my trial batch yesterday, each mold takes 1 tablespoon of batter.

Perfect size for a snack.

But the surface finish is lackluster, so I’m wanting to finish them. I’m thinking a pouring or dipping glaze.

But I want something that provides a nice finish. And something that hardens.

Thanks to Google I found quite a few keto glaze recipes, but half of them look like a fondue or a liquid sauce. And the others often look grainy.

Anybody got some good ideas for how to finish these?

    Basic mug cake recipe:

    1 tablespoon fat

    1 egg blended

    2 heaping tablespoons almond flour

    Pinch of salt

    1/4 teaspoon baking powder

    Vanilla extract

    Sweetener of your choice, to taste.

    Mixed together, all ingredients until blended and place into microwave safe container

    Microwave until cooked, usually 90 seconds.

    I don’t think it would be shiny, but maybe colored keto simple syrup. At least they would be colorful. And a hard maybe on shiny. 🤷

    Glaze is easy. I just keto-fy royal icing by swapping Swerve’s powdered sweetener in for a confectioners sugar replacement. Egg white, vanilla, powdered sweetener. 

    I like swapping the vanilla for lemon or orange extract.
