This milk dessert (sütlaç) dates back to 15th century. The top is caramelized in the oven. It has only 3 ingredients, milk-rice-sugar.
It has a form of rice paste for thickener, which is called “subye”. Rice is kept in water overnight and then grinded and strained.
This time I wanted to make it just for myself. Without the stress of step-by-step video or worrying about the daylight etc. To me, it is comforting, light in taste.
I added orange zest for citrus kick, used buffalo milk for extra creaminess.
Some like this rice pudding runnier, some like it thicker. I like it custardy.

Kıvam arttırıcı olarak “sübye” adı verilen bir pirinç ezmesitürü bağlayıcı var. Pirinç bir gece suda bekletildikten sonra öğütülüp süzülür.
Bu sefer, tatlıyı sadece kendim için yapmak istedim. Adım adım video çekim stresi, gün ışığı vs endişesi olmadan. Bana göre rahatlatıcı, tadı da hafif.
Fazladan lezzet için portakal kabuğu rendesi ekledim, ekstra kremsilik için manda sütü kullandım.
Bazıları sütlacı daha akışkan, bazıları daha katı seviyor; bense bu kıvamda seviyorum.
