INDREDIENTS:
Brinjal (eggplant) – 1 (large)
Tahini – 4 to 6 tablespoons
Sumac – 1/4 teaspoon + more for garnishing)
Lemon juice – 1 to 1.5 tablespoons
Salt – 1/4 teaspoon (as needed)
Roasted sesame seeds – 1/2 teaspoon
Olive oil – 1 tablespoon + 1 teaspoon for drizzling
Green chili (optional) – 1 finely chopped
Pomegranate arils (for garnish)
Mint leaves (for garnish)
METHOD:
Place the brinjal on a roasting grill pan over a low flame on a large burner. Turn it occasionally to ensure all sides are evenly roasted and the brinjal becomes soft.
Allow the brinjal to cool down to room temperature. Then peel off the outer skin as shown in the video.
Cut and chop the roasted brinjal to achieve a mashed texture. Then add the finely chopped green chilies (if using), sumac and salt. Continue to chop and mix with a knife to thoroughly blend the flavours.
Transfer the mashed brinjal to a serving bowl. Stir in the tahini and lemon juice until well combined.
Sprinkle the top with a bit more sumac, roasted sesame seeds, pomegranate arils and mint leaves for a fresh, vibrant finish. Drizzle with a teaspoon of olive oil.
Your brinjal dip is ready to be enjoyed with any bread of your choice, offering a simple yet flavourful experience.
