Lebanese traditional Easter cookies ( maamoul ) with walnut and pistachio filling .
These cookies are my favorite cookies of all time ♥️ traditionally made around Easter time ☦️ I really like to take my time and prepare them every year on Easter, my recipe is a bit different because I use frankincense water and I bless it with frankincense by smoking the cookie dough, also I simplified the recipe so everyone can prepare it without getting overwhelmed ♥️🌹
Recipe:
For the cookie dough:
2 cups fine semolina flour
1 cup unbleached all purpose flour
1 cup melted butter ( use good quality butter )
1/3 cup liquid milk
4 tablespoons raw cane sugar
4 tablespoons rose water
4 tablespoons orange blossom water
1 tablespoon frankincense soaked in 1/2 cup hot water ( you will use the water only )
1 teaspoon mahlab spice powder
For the filling:
1 cup crushed pistachios ( add 4 tablespoons raw cane sugar, 1 tablespoon rose water, 1 tablespoons orange blossom water)
🌹These are 2 kinds of filling 🌹
1 cup crushed walnuts ( add 4 tablespoons raw cane sugar, 1 tablespoon rose water, 1 tablespoons orange blossom water )
( you can always adjust the amount of sugar )
For smoking the dough:
Use a steel cup
1 piece of coal
1 teaspoon frankincense
Directions:
1- In a large bowl add semolina flour, unbleached flour, mahlab, sugar , melted butter ,
Rose water , orange blossom water , milk , frankincense water ( make sure use the water only ), mix by hand or electric mixer until fully incorporated.
2- now my favorite part, Make a well in the centre of the dough by pushing a glass or steel cup into it, Place the hot coal inside the cup, add 1 teaspoon of frankencens on the coal,
It will begin to smoke , Immediately cover the bowl and let it smoke for 3-5 minutes, once done smoking set aside, ( the dough can be used immediately ).
3- add the pistachios in food processor and pulse until crushed depending how you like it , some like it crushed and some like it smooth, do the same with the walnuts.
4- prepare 2 bowls , one for the pistachio and the other for the walnut , add on each sugar, rose water , orange blossom water and mix , now the filling is ready.
5-Preheat your oven to 350 degrees Fahrenheit.
6-Begin by taking about 1 tablespoon sized piece of dough and begin to make a hole or a pocket with your finger, fill the center with either pistachio mixture or walnut mixture and seal all around to create a ball.
7-In your wooden mold, place the filled dough ball and press firmly to allow the impression to mark the dough, bang the wooden mold to release the formed cookie.
8-Place on baking sheet and bake for 15-minutes.
9-Cookies will be done when bottoms are slightly golden brown .
10-After coming out of the oven, dust the
cookies with powdered sugar, let completely cool and then enjoy, can last in glass container for 2 months.
