Low and slow in my crock pot for 4 hours before adding the pie crust and baking for another 45 minutes. Served with a very generous dollop of mash potato.

    Recipe is really simple and just improvised.

    I seared a side of rump steak (just under 1kg) with a little salt and pepper.
    Deglazed the crock pot with a splash of beer (coopers) then added a splash of oil and half a finely diced onion, sauteed. Added one small finely diced celery stick and carrot. Sauteed until soft. Returned the beef to the pot and topped with 700ml of beer, 2 beef stock cubes, a pinch of dried thyme and parsley. Brought to the boil then popped on the lid and placed in the oven at 140C for 4 hours.
    Checked on it at 2 hours and it didn’t need any more liquid.
    I used a store bought puff pastry sheet to line and pie dish and filled it with the shredded stew. Back in the oven at 180C for 45 minutes.

  2. It looks wonderful ! Thank you for the recipe. I suspect you did the searing and baking in your oven in a Dutch oven. Probably the stew part could be cooked in a crockpot then transferred to a casserole for the addition of the crust.
