I'm looking at cooking this Porchetta for 8 people, but the serving size seems a little off.
Based on using a 12-15lb belly that's 1lb of pork belly per person, which seems pretty high!
Other recipes online seem to lean towards 1/2lb per person, which makes more sense to me.
Any thoughts? Is this just leaning in on it being easier with a whole belly and banking on you having leftovers.
