I’ve seen these “party ribs” around for a few years and decided to figure out what method I enjoy the most. I’ve been testing them for a couple of months, including the differences with spare ribs vs. baby back ribs.
Hot and fast using a Weber kettle is my preferred method, rocking around 350°F. I know this isn’t “smoking” but there is plenty of smoke flavor when using wood chunks.
Plus, they cook in 1 hour!

Looking good! We do the same with Vietnamese style ribs but usually finish in the oven.
