Fried Catfish
2 cups butter milk
1 or 2 tsp hotsauce of your choice
2 cups cornmeal
4tsp salt
2tsp pepper
2 tsp granulated garlic
1 tsp cayenne pepper
4 (6 to 8 oz) catfish fillets
2 quarts peanut or vegetable oil for frying

Basic Creamy Coleslaw
1 medium head green cabbage quartered, cored and shredded
1 carrot shredded on box grater
1/2 small onion shredded on box grater
2 tsp celery salt
1/2 cup mayonnaise
1/4 cup sour cream
1 tbls apple cider vinegar
2 tbls or more honey (to taste)
1/4 tsp pepper

Hushpuppies
3/4 cup cornmeal
1/2 cup all-purpose flour, plus extra as needed
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 tsp salt
1/4 tsp cayenne pepper
3/4 cup buttermilk
2 large eggs
1/4 cup minced onion or dry onion
peanut oil for frying

All right get a couple pieces of catfish couple puppies few fries nice creamy Co La there we go y’all country catfish dinner right there let’s Eat hey everybody Mike Chavez here once again welcome back to my channel if you’re new here welcome all right y’all today full catfish dinner catfish klaa hush puppies and french fries all homemade okay no Frozen stuff so I’m going to go back here let’s get this coal sace started cuz I got to

Salt it down let it sit for an hour so we’ll do that first so y’all stick around check it out this is going to be good y’all let’s do it all right for the co SL we’re going to take some regular old green cabbage slice this down as thin as we

Can all right we’re going to put this in a strainer and get the rest of this cabbage cut off and I’ll bring you back all right so we got all the cabbage in the strainer so I got some of this here uh fine sea salt go ahead and actually instead of trying to

Sprinkle it let me go ahead and put some in my hand we’re going to need about a tablespoon or so of this I guess so let’s give this a Sprinkle give it a toss without losing too much cabbage so we’ll let this sit here for an hour and drain and then we’ll rinse

It off and get the rest of our coasta going all right while this cabbage is draining I’m going to grate this carrot just to use regular cheese grater grate the carrot up that ought to be enough then I’m going to grate a onion see I guess all right that would be

Enough so we get this coal saw together so this coal saw has been here uh salted for an hour draining so I’m going to rinse it get some of the salt off of here all right to dry this cabbage we’ll put it in a towel we’ll put the carrots and onions with it

Gather it on up squeeze it out all right dressing calls for half a cup of mayonnaise all right half a cup of mayonnaise and go4 cup sour cream all right I’m going to put me about half a teaspoon of garlic salt not garlic salt I’m sorry celery salt right there celery

Salt tablespoon of vinegar so I’m going put a cap full two capfuls and the recipe calls for sugar but I like honey so it calls for two teaspoons of sugar so I’m going put about the equal amount about two teaspoons of honey all right we’ll whip this

Up little more honey I like my coal saw a little bit on the sweet side perfect put it on in there mix this on up coal SL is ready all right so let’s make up our Hush Puppies it’s going to take 3/4 cup of cornmeal so got some good stone ground

Cornmeal here pretty good stuff so we’ll go all right then half a cup of flour so this is half a cup of allpurpose unbleached King Arthur flour on in all right 1 and 1/2 tpoon of baking powder One and one half teaspoon baking powder half a teaspoon of baking soda there on in 3/4 teaspoon of salt all right about 3/4 teaspoon of salt 1/4 teaspoon cayenne pepper right there good cayenne pepper onion I got some dry onion so I’m going to put that’s going to be about

Little more than a tablespoon dry onion so we’ll go and mix up all our dry ingredients all right let’s get our wet ingredients ready so 3/4 cups of butter milk two large eggs get this whipped up all right bring our dry ingredients back go ahead and dump them on in

Give this a mix all right so this is basic hush puppy mix you can put anything else you want in here you can put corn jalapenos all right so we got our Dutch oven out again I’m going to put a couple inches of peanut oil in there

Enough to cover my heat probe my temperature probe so we’re going to bring this up to about 275 and do our french fries real I got me two big fat russet taters that’s what we’re going to make our french fries with so to cut these I’m going set them up on

Edge cut them in half all right now go this way so these are pretty big I’m going to cut them down just a little more one more time so we got these cut up just like that all right so these taters have been soaking for a little while going to put

Them on some paper towel so we want these as dry as you can get them all right my oil’s up to temperatures about 280 but that’s okay it’s going to drop quick so we’re going to leave these in here let them blanch cut your heat up so you don’t

Lose too much heat about 5 minutes we’ll let them cook of course they a not going to be completely cooked then we’ll take them out put them in to finish up later all right all right then these ters have been in here about 6 7 minutes so we’re going to go ahead and

Take them [Applause] out so for the hush puppies we want this temperature up about 350 all right this oil is up to 350 so I got my little scooper here so let’s go ahead and start dropping some hush puppies all right we’ll let these get golden brown and delicious these hush

Puppies are done I’m going to put them over here on a wire rack to drain hope they don’t roll off put the hush puppies in a 200° oven to keep warm All right for this catfish we’re going to lay them in this buttermilk and hot sauce mixture get them coated well get all the excess drip off then we’ll come in our Seafood breader get them Co well set them on a plate so let me get all these breaded up and I’ll bring y’all

Back all right oils up the temp there’s a lay the fish in nice and easy put those three in let them cook all right these been going for a couple minutes let’s goe and flip them over there we go all right these are ready to come out drain them

Off put them over on the wire rack all right we let the heat the oil come back up to heat to Temp 350 it dropped to 321 we’ll finish these catfish up then we’ll finish the ters all right we’re back up to 350 we get these fries in here finish them up

Once these are nice and brown and crispy we’ll get them out of there all right these are cooking up nice getting nice and brown almost there almost there a little bit more all right y’all these french fries are about there so put one over here cut it in

Half a little bit longer a little bit longer all right we’re going to call these fries done let them drain off put them on a wire rack over here turn my heat off all right while they’re still nice and hot going to put the old SPG on there for seasoning there we

  1. I haven't been fishing in 4 months because of my knee issue but man this wants me to hop my butt out there on crutches to catch some fish to fry up!
