A Cook’s Education (The Food Lab): Foolproof Soft-boiled Eggs, Attempt #2

    Now here we go. Now we’re talkin’. I cooked the egg for six minutes this time and under the running water managed to get the shell off without hurting it too much. I put the egg on top of a fat slice of pain au levain that I got from the fancy pants grocery store. After this nice picture was taken, I smashed it all over the top and sprinkled some salt over the whole thing.

    I feel good about it. I think I could manage a soft boiled egg if a recipe called for it, but I doubt I’ll be making them recreationally for breakfast again. If I want a runny yolk on some toast, I think I’d rather fry or poach an egg. Soon, perhaps even tomorrow, I shall move on to the wonderful and more familiar realm of hard boiled eggs. See you then!

    Background: Who am I? I am an amateur, a home cook. In general I am only responsible for feeding myself, my three year old, and my husband. Cooking, perusing cookbooks, and watching cooking shows is how I unwind.

    What am I doing? I have decided to cook through the Foodlab as a way to get back to basics and work my way through the fundamentals and blindspots in my cooking abilities.

    Yeah no point doing soft boiled ever really.

    Poached are perfect for what you want.

    Never did agree with SB – even as a kid with soldiers.

    Who wants to eat all the yolk and then eat just the whites on their own? Yuk.

    Plus the danger of biting on a bit of shell which is truly horrible and ruins the whole meal.

    Poached, scrambled, fried, hard boiled – plenty of ways to enjoy without all the hassle and stress.

  4. Good on you, but that takes 100% of the fun out of eating SB eggs. Into simmering water for 5 minutes, then into an egg cup, German egg cracker to decapitate, salt & optional pepper, demitasse spoon to free pieces of white from shell, toast soldiers to dip. Little bit of heaven.
