For the Cauliflower Grits:
  • 1 large head of cauliflower, cut into florets
  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1/2 cup grated Parmesan cheese
  • Salt and white pepper, to taste

For the Spicy Shrimp:

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt, to taste
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh parsley

Instructions:

Prepare the Cauliflower Grits:

  1. Steam the cauliflower florets until very tender, about 6-8 minutes.
  2. In a food processor, blend the steamed cauliflower with heavy cream and butter until smooth.
  3. Stir in the grated Parmesan cheese and season with salt and white pepper. Adjust the consistency with a bit more cream if needed. Keep warm.

Cook the Spicy Shrimp:

  1. In a bowl, toss the shrimp with olive oil, smoked paprika, garlic powder, cayenne pepper, and salt.
  2. Heat a large skillet over medium-high heat. Add the butter and minced garlic, sautéing until fragrant, about 1 minute.
  3. Add the seasoned shrimp to the skillet in a single layer. Cook for 1-2 minutes on each side or until the shrimp are pink and opaque.
  4. Remove from heat and drizzle with lemon juice, tossing to coat evenly.
