For the Cauliflower Grits:
- 1 large head of cauliflower, cut into florets
- 1/4 cup heavy cream
- 2 tablespoons unsalted butter
- 1/2 cup grated Parmesan cheese
- Salt and white pepper, to taste
For the Spicy Shrimp:
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (adjust to taste)
- Salt, to taste
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 2 tablespoons chopped fresh parsley
Instructions:
Prepare the Cauliflower Grits:
- Steam the cauliflower florets until very tender, about 6-8 minutes.
- In a food processor, blend the steamed cauliflower with heavy cream and butter until smooth.
- Stir in the grated Parmesan cheese and season with salt and white pepper. Adjust the consistency with a bit more cream if needed. Keep warm.
Cook the Spicy Shrimp:
- In a bowl, toss the shrimp with olive oil, smoked paprika, garlic powder, cayenne pepper, and salt.
- Heat a large skillet over medium-high heat. Add the butter and minced garlic, sautéing until fragrant, about 1 minute.
- Add the seasoned shrimp to the skillet in a single layer. Cook for 1-2 minutes on each side or until the shrimp are pink and opaque.
- Remove from heat and drizzle with lemon juice, tossing to coat evenly.
