Parmesan Crusted Cod
Ingredients
3-4 pieces Cod
1 tsp kosher salt
½ tsp pepper
½ tsp onion powder
½ tsp garlic powder
½ tsp chili powder
½ tsp paprika
½ tsp crushed red peppers
1 tsp lemon juice
1 tsp olive oil
½ cup parmesan cheese
Directions
Add fish to a bowl and season with salt, pepper, onion powder, garlic powder, chili powder, paprika, crushed red peppers, lemon juice, olive oil. Rub seasoning into fish then sprinkle parmesan cheese over fish to coat for the breading. Add fish to a baking tray lined with foil and cooking spray for easy clean up. Bake in the oven at 400 degrees for 12-15 minutes.

Welcome back towners today we’re going to make some parmesan crusted cod let’s get it All right guys start off this recipe here uh we have a bowl and we’re gonna place in our kahak uh this car was a individually wrapped and pre-frozen so we just thawed it out and then added it to our bowl we’re gonna season it up with some kosher salt and black pepper
Here we’re adding in a mixture of um garlic powder onion powder paprika and chili powder then we also added in some crushed red pepper flakes as well as some lemon juice and some olive oil and then we added in our parmesan cheese then we broke up all of the kernels and rubbed
Uh all the seasoning and coated into each other uh be gentle at this point um i went kind of rough in here and started just squeezing it and mixing around i didn’t realize how soft the cod was and basically broke up a couple of the pieces so you may want to
Line them out on a baking tray and then sprinkle everything over top after you rub the oil and seasoning into everything the uh mixture of seasoning into the onion powder garlic powder chili and paprika i just got tired of mixing all of the ingredients together so i just basically made a large
Uh batch of it just all equal parts and just kept that together so that way if i know i’m gonna use all four of those i just basically just use that mixture but after we have our breading and coating all over in the fish we’re going to go ahead and
Place this on a baking tray with some aluminum foil spray with cooking spray and we placed our fish onto the baking tray kind of pieced together the pieces that i broke up a bit again this was three pieces but one of them broke in half and the other one broke completely in half
So it looks like four pieces but it’s really three um here i’ve just basically taken the additional uh parmesan cheese with seasoning that did not stick to the fish and just basically just patting it and pushing it into the top halves of it were because we’re gonna bake this in the
Oven and uh once we get all the coating everywhere on it um as best as we could i’m gonna pop this in the oven at 400 degrees for about 12 to 15 minutes and this is how it looked after it came out of the oven
Once the fish is ready if you like you can uh pop it under the broiler for about a minute or so just so that everything can uh you know brown up or crisp up to your liking but uh this is how our fish came out and then
We’re going to hit it up with the taste test all right towners here we go with our taste test of this parmesan cheese crusted cod let’s see this piece is already pretty broke up let me just show you how break this one up close up parmesan cheese the crust it uh it’s
Stuck to it but that’s good that’s real good um i could have did a better job with the parmesan cheese uh sticking into it um i didn’t rub the olive oil into the fish like i did with the tilapia to get the coating all over the fish i
Just basically dumped oh that was russian kind of for some reason i don’t know why but i had a little i had to kind of pat and push the parmesan cheese all over to the places i needed it if i would have basically rubbed it in everywhere and then sprinkled the parmesan cheese
Over top i would have got a better eating coating on it or i could have used a uh egg wash and uh then just sprinkle it over top not in a bowl just a couple of a couple of things i could have did differently but
You get to get to what was going on so but this this fish came out very nice it seasoned well very well um i like the lemon juice that i added to it and um crushed red pepper gave me a little bit of heat but it’s good
Hopefully you guys can see that and not have to look into my eyes but if you do well this is really good you’re doing a little taste every night there’s only three pieces i don’t i don’t i forget if this was a full it was a 12 ounce bag of
Uh cod that was frozen individually frozen the bag was open but i don’t know the bag may have busted from being open in the in the freezer but there’s only three pieces in there they’re pretty small but uh generally shrinks up when you cook it
A lot of the water releases out of it but these didn’t shrink up that much but these came out very nice go ahead and try this recipe out parmesan crusted cod again you could um do the way i did it just make sure that you rub the olive oil over everywhere
And be gentle with it because mine kind of broke up in two pieces so just be gentle don’t rush taking time but uh try it out thank you guys for watching now that was our taste test guys um again this fish came out very well it was very very seasoned well um the
The spiciness from the even though it was just a little bit of crushed red pepper that really came through the fish absorb that heat uh really well so if you don’t want any spiciness to it just don’t add that portion um or you know you can always add
Jalapenos to it if you like just for that heat but um the parmesan crusted uh it worked well just again you know just make sure that you are gentle with the fish and you may want to you know rub the seasoning in and then just coat the uh spread the spread
Sprinkle the seasoning over top of it dusting it over it as opposed to just rubbing everything in because it may not stick as well you can also do egg wash if you like that process i just wanted to um keep it light as possible on this one but uh all those
