6 Slabs unopened at 3:15pm EDT on Easter day for a meal the same day?
Most folks would be smoking those for at least 4-5 hours. We usually do ours very low and slow for about 2 hours, then a bit higher temp for another 5-7. Then a sear on meaty parts for a bit of crunch. Seems like you’re headed for a rather late dinner.
Many folks like to dry brine ribs for at least a few days as well.
