Posting another soup idea that's very filling yet low in calories. Recipes below if you'd like to try it out. Even though it's getting warmer by the day where I live, soups are becoming my favourite lately.
Home made dumplings for two: 15g finely chopped carrots, 10g grated onion, pinch of garlic powder, 15g sweetcorn, 70g minced chicken breast, 4g white flour, pinch of salt, 1 and a half rice paper, cut into six triangles (cut it in half, then cut halves in 3 small triangle). Mix all the filling ingedients, wet triangle and add a tsp of filling on the middle of the triangle. Fold all corners to the middle, pinch sides and fold to the side.
Soup base: 1 chicken stock cube (knorr), 1 garlic clove, 1tsp of soy sauce, a pinch of ginger powder, 1tsp of sriracha. (Only add veggies after cooking the noodles) 50g chopped bok choy, 84g zucchini.
Cook dumplings first for 10 minutes in the simmerimg soup base, take them out and add your noodles (I added one pack from and unknown brand, came out as 35g per portion once cooked). Take out the noodles and add your vegetables, cook for 3-4 minutes and assemble.
Enjoy with dry chili flakes.
Hope you like it if you decide to try it 🙂 I guess you could make the dumplings in bigger batches, freeze them and them to soups later to make it easier on yourself. I think that's just what I'll do.
