Chard, spinach, and onion strata

    Overnight strata: (prep the night before and put in oven for breakfast)

    Bread cubes (used about 3/4 loaf of Italian bread or about 6 cups)

    Bunch of Swiss chard, chopped

    Bunch of spinach, chopped

    Half onion sliced or diced

    Garlic clove crushed or diced

    1-2 Tbs olive oil

    2 Tbs water

    2-3 cups cheddar, gruyere, or swiss cheese, shredded or cubed

    red pepper flakes

    8 eggs

    2 1/2 cups milk

    2 TBS dijon mustard

    1/4 tsp salt

    splash of hot sauce

    Heat oil in pan. Saute onion and garlic until translucent. Add chard and spinach along with 2 T water. Cook greens until wilted. Grease/oil 9″x13″ baking dish. Layer bread cubes, sauteed greens, crushed red pepper flakes, and cheese in 2-3 layers (depending on the depth of your dish). In a large bowl beat eggs with milk, dijon mustard (or other mustard) salt, and hot pepper sauce. Pour egg custard over dish. Cover dish and place in refrigerator for at least an hour or so, or overnight.

    In the morning take baking dish out of refrigerator for half hour while preheating oven to 350F. Place uncovered in 350 F oven for 20 minutes. Cover with foil and bake another 30 minutes. Remove from oven and let sit 10-20 minutes before serving.
