
Hi! I tried Jjigae recently and fell in LOVE. I’m buying ingredients for Jjigae to make at home, so I really only want to buy one paste. I ran into two recipes (linked), so now I’m debating between Doenjang paste and Gochujang. Which paste do you prefer? Which recipe do you prefer? (I’ve heard a lot of good things about the maangchi recipes).

IMHO, kimchi jjigae should not have any gochujang in it.
You can make kimchi jjigae without gochujang but you need doenjang for doenjang jjigae so I’d say doenjang.
Also, maangchi is Korean but Mrs. Shi is Chinese so I’d go with maangchi’s recipe.
