4 medium-large leeks (about 500 grams)
4 medium potatoes
1 glass white wine
500 ml vegetable broth
200 ml cream of rice
Salt & pepper ๐Ÿง‚
2 slices of bread for croutons
EVO oil
Dill

First thing is the leaks now the leaks you just chop them up coarsely uh about the leaks I like to use the white part of the uh light green Parts but also a little bit of the darker green Parts because I think that it’s got that extra

Taste to it some people only use the white part and a little bit of the light green part part and because it also changes the color of the soup it becomes more white if you only use the white part I really like the taste of the

Green part of the leaks so I use them too after the leaks you also chop the potatoes coarsely and once you’ve done that basically you’re done with the preparation of this soup this is why I say it’s delicious but it’s extremely simple it’s like foolproof even if you’ve never cooked anything before then

A little bit of olive oil and then you add your leaf leaks and you add after the leaks also your potatoes I usually do this on a fairly High flame at the beginning um because I like to raise the temperature a little bit because now comes the Italian Touch My Personal

Touch which is a glass of wine that I add to the vegetables now this is totally optional if you don’t like wine if you don’t want to use wine in this recipe you don’t have to use it I just think that it gives it the extra touch

In terms of flavor but it’s not necessary the recipe will be fantastic even if you don’t use the wine then you add the vegetable broth just mix it up a little bit and cover it with a lid it’s approximately 15 to 20 minutes and the

Magic is done you just use a blender and make it very very smooth because this recipe needs to be super smooth so make sure that there is no bits and pieces of vegetables in there and once you’re done with that the Finishing Touch of this soup because it will not be vious swas

Without the cream in my specific case I am using a rice cream not soy cream soy cream or any kind of cream you want to use is going to work perfectly in the soup I personally use rice cream for this one because this soup is slightly sweet because of the potatoes and the

Leaks and I like the taste of the rice cream in it but whichever one you prefer is absolutely fine and will work very well in this recipe my final touch is a little bit of Dill again you can use a parsley you can use other herbs I like

Dill on this one because I think it goes very well with the flavors and don’t forget the croutons because the croutons are going to be the perfect Finishing Touch for this amazing soup I really love it it takes literally like 10 minutes to prefare 15 minutes to cook
