2nd time trying this method out. Pretty much similar to 3-2-1:
Pealed the pineapple.
Used home made rub for ribs. Poured a little maple syrup on the pineapple. Used skewers to hold ribs around the pineapple.
I put them in the egg for about 3 hrs & spritzed with apple cider vinegar /pineapple juice every hour or so (250ish).
then I wrapped them up and poured a little pineapple juice for two or so hours (275-300).
Then took them out of the foil and basted it with its own juice and bbq sauce and let it sit in the egg for another 45 min till I started seeing a lot of the bone.

I was able to easily pull off one of the bones to determine that they were done. Easily cut the ribs with a plastic knife before serving.
Turned out fantastic. The fam was pleased!!!

This may have to happen this week during spring break!
I wonder how much the meat tenderizing ability of pineapple juice influences the end result. How do you serve these?
