I cooked a beef hammer yesterday for 10 hours today I checked how many charcoal was left. When I opened the green egg I saw that the sides had a weird color, does anyone know what this is?

    Just some grease. Once your egg gets black you won’t see it anymore. Totally normal.

    It needs to build up. Just fire it up again you’ll be fine. Try to mix your cooks a bit, don’t always go low and slow. Heat it up once in a while for pizza, flammkuchen or hamburgers etc. Just so all excess build up can burn away. You won’t need a “clean burn” that way, as some people will try to make you believe.
